Woohoo! My family and I did something today that I have been wanting to do since I was in college. We went to a strawberry farm and picked fresh ripe strawberries. It was such a wonderful time. My kids really enjoyed it, and wow, the fruits of our labor are so tasty! Though the summer has just begun, I can already tell today’s outting will be one of my favorite summer memories.
What to do will all those berries? In addition to sharing them with some special folks we love tons, I am planning on making some Strawberry Nut Bread. It is my Nanny’s recipe, and one of my all-time favorites. So, I’m sharing the recipe too!
1/3 cup shortening
2 eggs
3 tablespoons buttermilk
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 chopped nuts
1 cup sliced strawberries
Cream sugar and shortening. Blend in eggs and buttermilk. Combine flour, baking soda, and salt. Add to creamed mixture. Stir in nuts and strawberries. Pour into a greased 9 inch loaf pan. Let stand 20 minutes. Bake 350 degrees for 50 -60 minutes or until bread tests done.
